Ingredients
2 sheets puff pastry, thawed
2 tablespoons grapeseed oil
2 tablespoons flour

1 cup low fat milk
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
½ pound diced ham (about 2 cups)
2 cups baby spinach
1 cup shredded Swiss, divided
1 egg, beaten
Method of Preparation
Preheat oven to 400°F.
Cut each sheet of puff pastry into 9 squares and place on 2 sheet pans lined with parchment paper.
Heat grapeseed oil in a medium saucepan over medium heat.
Whisk in flour and cook for 1 minute.
Whisk in milk, salt, pepper, and garlic powder until smooth.
Bring to a simmer and cook until slightly thickened.
Stir in spinach until wilted.
Stir in ham and ½ cup Swiss.
Divide filling between puff pastry squares.
Top each square with remaining ½ cup Swiss.
Fold corners of puff pastry over the filling.
Brush with beaten egg and bake for 20 minutes or until golden brown.
