This Cinnamon-Raisin and Pumpkin Bread Pudding is so tasty and it incorporates classic fall flavors in a new way!

Ingredients
1 box pumpkin bread, prepared according to package directions
1 1/3 cup half and half
¾ cup pumpkin puree
3 eggs
2 tablespoons sugar
1 tablespoon pumpkin pie spice
3/4 cup raisins
2 tablespoons rum
3 teaspoons of cinnamon
Preparation
Once the pumpkin bread has cooled, remove from bread pan and dice into cubes. Preheat oven to 350°F. In a large mixing bowl, whisk together the half and half, pumpkin puree, eggs, sugar, pumpkin pie spice, raisins, cinnamon, and rum. Add the bread cubes and use a rubber spatula to fold the ingredients together. Let rest for about 10 minutes to allow the bread to soak up the mixture. Add to a 9 x 9 inch greased baking dish and bake for 30 minutes or until the pudding has set. Can be served warm or chilled.
