This Cinnamon-Raisin and Pumpkin Bread Pudding is so tasty and it incorporates classic fall flavors in a new way!

Ingredients
1 box pumpkin bread, prepared according to package directions
1 1/3 cup half and half
¾ cup pumpkin puree
3 eggs
2 tablespoons sugar
1 tablespoon pumpkin pie spice
3/4 cup raisins
2 tablespoons rum
3 teaspoons of cinnamon
Preparation
Preheat oven to 350°F.
In a large mixing bowl, whisk together the half and half, pumpkin puree, eggs, sugar, pumpkin pie spice, raisins, cinnamon, and rum.
Add the bread cubes and use a rubber spatula to fold the ingredients together.
Let rest for about 10 minutes to allow the bread to soak up the mixture.
Add to a 9 x 9 inch greased baking dish and bake for 30 minutes or until the pudding has set.
Once the pumpkin bread has cooled, remove from bread pan and dice into cubes.
Can be served warm or chilled.
