Ingredients
1 cup dry instant brown rice, prepared according to package directions
2 teaspoons grapeseed oil
1/2 cup diced pineapple
1/2 red bell pepper, diced
1 pound shrimp, peeled and deveined
1/4 cup sweet & sour sauce
Preparation
Prepare rice according to package directions.
While rice is cooking, heat grapeseed oil in a 10-inch nonstick skillet over medium-high heat.
Add the pineapple and red bell pepper.
Sauté for about 5 minutes or until lightly browned.

Add the shrimp and sauté until shrimp is pink and opaque.
Remove pan from heat and stir in sweet & sour sauce. Serve over prepared rice.
