Ingredients
1 pound boneless, skinless chicken thighs
1 small red onion, diced
2 cups chicken bouillon soup base, prepared according to package directions
1/2 green bell pepper, diced
1 medium carrot, cut small
1 teaspoon garlic, minced
1 teaspoon Cajun seasoning
1 cup frozen chopped okra
1 (14.5 ounce) can pinto beans, drained and rinsed
1 tablespoon cilantro, chopped
Method of Preparation
In a slow cooker, combine all ingredients, except cilantro, and cook on high for 3 hours.
Tear the chicken thighs.
Before serving chili decorate with cilantro.





With the weather today this Chili is calling out to me….I love everything spicy but my husband has a sensitive pallet. Maybe we can try this Cajun Chilli though…I don’t think cajun spice is too hot.
