This recipe for Feta, Mushroom, & Spinach Mashed Cauliflower is so tasty and healthy. It is the perfect side for any meal or party!
1 large head cauliflower
2 tablespoons butter
¼ cup light sour cream
2 teaspoons fresh dill
5 ounces’ frozen chopped spinach, thawed and excess liquid squeezed out
1/3 cup feta, crumbled
¼ cup scallion, sliced
1/4 cup fresh mushrooms
Chop cauliflower and add to a saucepan.
Add water enough to cover the cauliflower.
Boil and then cook for about 10 minutes; drain.
Puree until smooth: butter, sour cream, dill, and cauliflower.
Transfer to a bowl and lightly mix spinach, feta, and scallions together.
