Ingredients
2 avocados
2 1/2 teaspoons guacamole seasoning
1 (16 ounce) can re-fried beans
6 corn tortillas
1/2 red onion, thinly sliced

1 tomato, diced
1 cup shredded cheese
¼ cup lettuce
2 scallions, chopped
2 tablespoons fresh cilantro, chopped
Preparation
Prepare guacamole according to package directions and keep separate with plastic wrap placed directly on it to prevent any browning.
Preheat broiler.
Spread beans on to all of the corn tortillas.
Separate three of the tortillas from each other, these will be the top and the others will be the bottom.
For the top layer add the red onion and tomatoes.
Place all tortillas on a baking sheet and broil them for 1 minute.
Remove them from the oven and divide cheese among them.
Place them back under the broiler until the cheese is nicely melted.
Remove from the oven again and add the guacamole to the bottom layer.

Place the top layer on the bottom layer and add the lettuce, scallions, and cilantro to the top layer and serve hot.
