A Quick Bite of History: Macaroni and Cheese
Macaroni and cheese has its origins in medieval Europe, but it became a true comfort food icon in the U.S. after Thomas Jefferson discovered the dish during his travels in Italy and brought it back home. Originally served as a baked casserole, it’s been reinvented in countless forms over the years, from stovetop versions to fried bites.

1/2 teaspoon salt
1/2 teaspoon pepper
Method of Preparation
Preheat the Oven
Start by preheating your oven to 400°F (200°C) so it’s ready for your delicious mac and cheese bites. This temperature will help give them a golden, crispy exterior while keeping the inside creamy.
Cook the Elbow Macaroni
Cook the elbow macaroni according to the package directions. Typically, this means boiling the pasta in salted water for about 8-10 minutes, or until al dente (slightly firm to the bite). Once the pasta is cooked, drain it in a colander and set it aside to cool slightly.
Make the Cheese Sauce
In a small saucepan, melt the butter over medium heat. Stir it occasionally to prevent burning. Once the butter is melted, whisk in the flour and cook for about 1 minute to create a roux (this thickens the sauce). Next, slowly whisk in the milk and garlic powder. Keep stirring as it heats up, and cook for about 3 minutes, or until the mixture thickens to a creamy consistency.
Add the Cheese
Once the sauce is thickened, remove the saucepan from heat. Stir in the shredded cheddar and Monterey jack cheeses. Continue stirring until the cheese is completely melted and the sauce is smooth and creamy.
Combine with Pasta
Add the cooked macaroni to the cheese sauce and stir to coat the pasta evenly. Once the pasta is fully mixed with the cheese sauce, beat an egg in a small bowl and stir it into the pasta mixture. Season with salt and pepper to taste. The egg helps bind the mac and cheese bites together when they bake.
Prepare the Muffin Tin
Lightly grease a 12-cup mini muffin tin with cooking spray or a small amount of butter. This will ensure the mac and cheese bites don’t stick and are easy to remove once baked.
Fill the Muffin Tin
Spoon the mac and cheese mixture into each muffin cup, dividing it evenly among the 12 cups. Press the mixture down lightly with the back of a spoon to make sure each bite is compact and holds together during baking.
Bake the Mac & Cheese Bites
Place the muffin tin in the preheated oven and bake for 12-15 minutes, or until the mac and cheese bites are set and lightly browned on top. The edges should look crispy and golden.
Cool and Serve
After baking, remove the muffin tin from the oven and let the mac and cheese bites cool for about 10 minutes. This helps them firm up and makes it easier to remove them from the tin.
Garnish and Enjoy!
Once cooled, gently pop the bites out of the muffin tin. Garnish with a sprinkle of freshly grated Parmesan cheese and chopped chives for an added flavor boost, if desired. These mac and cheese bites are now ready to enjoy—crispy on the outside, creamy on the inside, and packed with cheesy goodness!
