Of course, more strawberries ended up in my mouth than in the basket, but that’s all part of the fun and a memory I’ll always cherish.

These days, strawberries are easier than ever to enjoy, whether you grow them in your backyard or grab them at the store. And one of my favorite ways to use them in the summer is in these refreshing Strawberry Watermelon Ice Pops.

This recipe is light, hydrating, and incredibly easy to make. It’s perfect for hot days and totally customizable, you can swap in different fruits or juices to create your own flavor combinations. Short on time? Frozen strawberries work beautifully and make this recipe even quicker to pull together.

Prep Time

3-4 hours (including freezing time)

Ingredients

1 cup coconut water

2 cups watermelon juice

1 tablespoon fresh lime juice

1 (10-ounce) bag frozen strawberries

Method of Preparation

In a small saucepan, combine the coconut water, watermelon juice, and lime juice. Heat over medium heat, stirring occasionally, until fully mixed and warmed through.

Pour the mixture into a blender and add the frozen strawberries. Blend until completely smooth.

Carefully divide the mixture evenly among ice pop molds.

Freeze until solid, about 3–4 hours or overnight.
