Ingredients
3 tablespoons grapeseed oil, divided
2 bell peppers, diced
1 yellow onion, diced
1 (28 ounce) can peeled plum tomatoes
2 tablespoons Mediterranean seasoning dry rub
2 tablespoons garlic powder, divided
1 eggplant, cubed
2 zucchini, cubed
1 tablespoon thick spaghetti sauce blend

Using a large pot, heat 1 tablespoon of grape seed oil over medium heat.
Add the bell pepper and onion; sauté until tender, about 7 minutes.
Canned tomatoes – remove the seeds and discard – dice the tomatoes.
Tomatoes, juice, onion, and pepper will go into pot together.
Use the garlic powder and Mediterranean rub to season the mixture.
Cover and simmer for 30 minutes.
In a separate skillet heat the remaining 2 tablespoons of grape seed oil.
Add the zucchini, eggplant, and 1 tablespoon garlic powder to spaghetti sauce.
After 30 minutes, add this mixture to the pot with the tomatoes.
Stir all the ingredients together.
Cook with lid on, until eggplant and zucchini are tender.
