4–6 strips bacon, cooked and crumbled
4 boneless, skinless chicken breasts (about 1½ pounds)
½ teaspoon salt
½ cup spinach, finely chopped
¼ teaspoon black pepper
1 tablespoon grapeseed oil
1 teaspoon minced garlic
Preparation
Preheat the oven to 350°F.
In a mixing bowl, combine the goat cheese, garlic powder, Italian seasoning, thyme, chopped spinach, and crumbled bacon. Mix until well incorporated and creamy.
Using a sharp knife, carefully cut each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
Spoon the goat cheese mixture evenly into each chicken breast pocket, gently pressing it inside.
Season the outside of the chicken breasts with salt and black pepper.
Heat grapeseed oil and minced garlic in a large oven-safe skillet over medium-high heat until fragrant.
Add the stuffed chicken breasts to the skillet and sear for about 3 minutes per side, until lightly golden.
Transfer the skillet to the preheated oven and bake for 12–15 minutes, or until the internal temperature reaches 165°F.
Remove from the oven and let the chicken rest for 5 minutes before slicing and serving.
