Ingredients
1/4 cup sangria mixer
1 tablespoon grapeseed oil
½ tablespoon low sodium soy sauce
1 teaspoon chipotle lime rub
4 chicken breast (1 pound)
½ cup mango, diced
½ cup pineapple, diced
½ red bell pepper
2 tablespoons red onion, diced
1 teaspoon lime zest
2 tablespoon fresh cilantro, chopped
2 teaspoons carne asada seasoning
1 tablespoon sherry vinegar
Preparation
In a bowl whisk together the sangria, grapeseed oil, soy sauce, and chipotle lime rub.
Add this marinade and the chicken to a resealable bag and marinate in the refrigerator for 2 hours.
Meanwhile, prepare the salsa by combining the remaining ingredients (mango through sherry vinegar).
Refrigerate until ready to use.
Preheat grill or grill pan to medium high heat.
Lightly grease with pan spray.
Grill the chicken 5-8 minutes per side or until the chicken is completely cooked through.
Serve with the salsa.
I’m not a big mango person, do you think if I double the pineapple the salsa will still come out okay? Will it balance well with the lime chicken, probably right?
