Ingredients

3 acorn squash

1 tablespoon grape seed oil

¼ teaspoon salt, divided

¼ teaspoon ground black pepper

1/2 ring of Polish kielbasa

1 onion, diced

¼ cup apple cranberry jam

1 tablespoon chopped sage

½ cup farro, prepared according to package directions

½ cup shredded parmesan

Preparation

Preheat oven to 400°F.

Trim the ends from each squash and slice in half. Remove seeds and discard.

Place acorn squash in a baking dish and brush the flesh grape seed oil. Season with salt and black pepper.

Bake for 35 minutes or until tender.

Meanwhile, heat a 10-inch nonstick skillet over medium-high heat.

Add the Polish kielbasa and onion and sauté until pork is completely cooked and onion is tender.

Transfer to a mixing bowl and fold in apple cranberry jam, sage, and prepared farro.
