This recipe for Chipotle Lime Shrimp Cups is so easy and packed with flavor. Everyone will want to try one of these shrimp appetizers!

24 wonton wrappers

2 tablespoons grapeseed oil, divided

24 shrimp, peeled and deveined

1 tablespoon chipotle lime rub

1 cup arugula

1 cup sour cream

1 cup salsa

lime zest


Preheat oven to 350°F.

Lightly brush wontons with 1 tablespoon of grapeseed oil.

Arrange 24 in a mini muffin/cupcake pan.

Bake 5-7 minutes or until golden brown and crisp.

Toss shrimp with remaining grapeseed oil and chipotle lime rub and sauté over medium-high heat until cooked through.

Meanwhile, combine sour cream and salsa; set aside.

To assemble, fill each wonton cup with a small dollop of the sour cream mixture, a few arugula leaves, one shrimp then top with lime zest.
