The filling is rich and flavorful without being heavy. The low-fat milk keeps it creamy but light, while the garlic powder, salt, and pepper add a savory depth. Baby spinach adds color, nutrients, and a subtle earthy flavor, complementing the salty, slightly sweet diced ham. The Swiss cheese melts beautifully, binding the filling together and creating that warm, comforting gooey center that everyone loves.
What makes these bites so appealing is the versatility of puff pastry. It’s a classic French technique used in countless recipes from delicate tarts to savory pies. The beauty of using pre-made puff pastry is that you get the same buttery, flaky layers without the hours of labor-intensive rolling and folding. By simply cutting the pastry into squares and folding the corners over the filling, you create a mini pastry masterpiece that looks elegant but is deceptively simple.
A Short History of Puff Pastry
Puff pastry, or “pâte feuilletée,” has roots in 17th-century France, where bakers perfected the art of folding butter into dough to create layers that puffed beautifully in the oven. Originally a labor-intensive process reserved for the wealthy, puff pastry eventually became a staple in French cooking, appearing in savory pies, quiches, and tarts. Over time, it spread across Europe, and today, ready-made puff pastry allows home cooks to create impressive, layered dishes in a fraction of the time. These Spinach & Ham Puff Pastry Bites are a perfect example of using this historical technique for modern, accessible entertaining.

Ingredients
2 sheets puff pastry, thawed
2 tablespoons grapeseed oil
2 tablespoons flour
1 cup low-fat milk
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
½ pound diced ham (about 2 cups)
2 cups baby spinach
1 cup shredded Swiss cheese, divided
1 egg, beaten
Method of Preparation
Preheat your oven to 400°F. Line two sheet pans with parchment paper and cut each puff pastry sheet into 9 even squares. Place the squares on the prepared pans.
In a medium saucepan, heat grapeseed oil over medium heat. Whisk in flour and cook for 1 minute to form a roux.
Slowly whisk in milk, salt, pepper, and garlic powder, stirring constantly until smooth. Bring to a simmer and cook until slightly thickened.
Add the spinach, stirring until wilted. Then stir in diced ham and ½ cup of Swiss cheese until melted and combined.
Spoon the filling evenly into the center of each puff pastry square. Top each with the remaining ½ cup of Swiss cheese.
Fold the corners of the puff pastry over the filling to form a little envelope or square parcel. Brush the tops with beaten egg to create a golden, glossy finish.
Bake in the preheated oven for 20 minutes, or until the puff pastry is golden brown and puffed.
Serve immediately with a crisp light white wine or your favorite cocktail.
