This recipe has become one of my all-time favorites, not only because it’s vegetarian, but because it’s nutritious and balanced. With fewer than 450 calories per serving, about 12 grams of protein, and just 170 mg of sodium, it’s lower in calories than the average meal (around 260 calories) while still being filling and delicious.

Ingredients

1 cup fresh cilantro, chopped

1 lime juiced

3 tablespoons olive oil, divided

1 teaspoon fajita seasoning

1 pound firm tofu, cut into 8 slices

1 red onion, sliced into rounds

3 bell peppers, sliced

1 teaspoon steak rub seasoning

1 tablespoon honey

1 teaspoon red wine vinegar

Preparation

Preheat oven to 450 degrees F.

Line a baking sheet with foil.

In a bowl combine cilantro, lime juice, 1 tablespoon olive oil, and fajita seasoning.

Lay the sliced tofu in a single layer in a deep dish and pour the marinade over it.

Let sit at room temperature for 10-15 minutes to marinate, turning occasionally.

Meanwhile, toss the onions and peppers with the remaining 2 tablespoons of olive oil and the steak rub. Set aside.

Place the tofu in a single layer on one side of the prepared baking sheet (save the marinade.)

Spread the vegetables in a single layer opposite tofu.

Roast for 20 minutes, or until vegetables are tender and tofu is lightly browned.

While vegetables and tofu are in the oven, transfer the leftover marinade to a small blender or food processor.

Add the honey and red wine vinegar and blend until combined.

Serve with the tofu.
